Black Bean Burritos

You have probably had one of those huge specialty burritos that you can get from various restaurants these days. One of my favorite burritos to get is stuffed to the brim with black beans, rice, guacamole, salsa, sour cream, sauteed peppers and onions and wrapped in a super thin, warm tortilla. These giant burritos are great. They are filling and delicious. Of course the one you make is always better than the burritos prepared in chain restaurants. Plus, they are easy to make.

You can save time if you make these with store-bought tortillas, beans, etc. However, these burritos are best when they are paired with homemade thin flour tortillas, guacamole, and smoky serrano salsa. The extra work you put into making these ingredients will pay off.

Serves: 15 burritos
  • 1 lbs dry Black beans
  • 32 oz Chicken stock
  • 1 tablespoon Cumin
  • 1 Yellow onion sliced
  • 2 Anaheim peppers sliced
  • 2 tablespoons Canola oil
  • Salt
  • Tortillas
  • Handful of Cilantro picked
  • Sour cream
  • Guacamole
  • Brown rice
  • 1 lime quartered
  • Queso fresco (optional)
  1. Place the black beans, chicken stock, and cumin in a slow cooker and stir.
  2. Cook for 1-2 on high. Check the liquid level and make sure that it is still above the level of the beans. Add water if needed.
  3. Turn the slow cooker to low and cook for an additional 3-5 hours. Add water as needed if the level becomes too low.
  4. Add 2 teaspoons of salt near the end of the cooking period.
  5. Cook your brown rice near the end of the cooking period as well.
  6. Heat a skillet on medium to medium-high and add canola oil.
  7. Once the oil shimmers, add onions and peppers. Sprinkle salt over the top and stir.
  8. Continue cooking the onions and peppers until they are lightly caramelized.
  9. To assemble the burritos, put a bed of rice on a tortilla, followed by black beans, guacamole, sour cream, salsa, sauteed onions and peppers, cilantro, and a squeeze of lime. You may also add some queso fresco if you would like. Fold and enjoy!
